Collaboration with MobiChef launching two-month buffet menu by popular Sichuan ‘take home chef’ Xuelian Liu

The collaboration is launched with a buffet menu of the authentic Sichuan ‘home cooking’ from now till November 30, 2017.

The first themed showcase with one of the most popular chefs from the MobiChef team, Xuelian Liu, a specialist in home-style Sichuan cuisine which is away from the usual oily and spiciness.

Born in Guang An, Sichuan, she has enjoyed cooking since she was a child, and now enjoys cooking for her friends and family. To extend her passion and love further, she started her journey as a private kitchen chef in Hong Kong with her husband whom she met a few years back in Hong Kong and created the team “love-bird”, Xuelian to stay in the kitchen to prepare the dishes and her husband introduces her home-style delicacy to the foodies.

Her authentic home-style cuisine uses different herbs and chilli and introduces a far more complex and delicate perspective to Sichuan cuisine – rarely encountered in restaurants, where dishes are famously fiery and spicy.

She has also become renowned for her traditional, homemade Sichuan chilli oils and sauces in her secret recipes, which balance the hot spiciness and mouth-numbing flavours.

To kick off this first partnership, Xuelian is presenting a ‘Sichuan Private Kitchen’ buffet menu, rotating a selection of popular Sichuan dishes every two weeks, weekdays priced from HK$318 + 10% for lunch and dinner at HK$598 + 10%.

Among her signature dishes, Sichuan Grass Jelly is a cooling green bean snack seasoned with homemade chilli sauce, aged vinegar, soy sauce and Sichuan pepper sauce, delighting taste buds with the contrast of cool jelly with an enticing chilli kick.

Crispy and Spicy Shredded Potato is a family tradition, made with crispy chunks of potatoes in chicken broth, and seasoned with Xuelian's homemade chilli sauce. The spiciness and the chunky crunchiness brings in different texture and layers of hot flavours to the dish.

Chicken in Sichuan Chilli Oil is a popular Sichuan cold appetizer, cooked with star anise, cinnamon and bay leaves, and marinated in a homemade chilli sauce with crushed peanuts and soy sauce.

Noodles in Sichuan Sauce - a mildly spiced sauce was added to the noodles, which were meticulously sourced with a specific thickness, enabling the dish to be thoroughly dressed. 

Spicy Shrimps is a tongue-numbing dish bursting with colour and flavours from dried chilli, Sichuan pepper, fried shallots, onions and more.

Traditional Steamed Pork with Sweet Potatoes and Pumpkin is a classic Sichuan delicacy of prime pork belly marinated with additional special rice powder made with sticky rice, rice, red Sichuan pepper and dried chilli, then steamed over sweet potatoes and pumpkin. The pork is full of flavour and non-greasy, while its juices penetrate the vegetables. Definitely a delicious and unforgettable dish.
