Café on the PARK Strikes Gold at 2016 Best of the Best Culinary Awards – Egg Category

(Hong Kong, 23 August 2016) They say the simplest kitchen recipes often pose the toughest challenges,but Chef Tung Wai Ho really cracked it with his Duo of Eggs creation, garnering Gold for The Royal Pacific Hotel & Towers’ entry to the Egg category ofthe “2016 Best of the Best Culinary Awards”, the city’s largest cook-off, organised by the Hong Kong Tourism Board. 

Despite stiff competition, the veteran chef impressed the panel of judges comprised of renowned restaurant critics and catering professionals, and prevailed in what is considered one of the complicated categories in the annual culinary event. “The special difficulty in preparing egg-based dishes is to allow the egg to be the dominant note, but without overpowering or drowning out the other flavours in the dish,” says Chef Tung. “Hence, everything, from the choice of egg to the complementary nature of the other ingredients, makes a difference to the final result.”  

For his winning effort – an entirely original creation – Chef Tung used fresh Japanese eggs toput togetherwhat is essentially a combo dish. Diners are advised to start Duo of Eggs from theScrambled Egg with Canadian Sea Urchin on Steamed Egg, presented in their shells.Chef Tung adapted the rigorous methods of fine Japanese cooking to create a delicate bed of steamed egg, infused with a broth of dried bonito flakes for a hint ofsweetness. Topping off the steamed egg is a wonderfully fluffy, golden yellow scrambled eggmixed with Canadian sea urchin, which brings a dash of savoury to the recipewhile accentuating the silkiness of theegg underneath.

Arrayed on the other side of the platter is the Scrambled Egg White with Scallop and Salmon Roe in Fried Whitebait Nest. The distinct textures of the scrambled egg white, the sweet and succulent scallop, the briny salmon roe and the crunchydeep-fried whitebait all combine to deliver a unique mouthfeel. In the era where “camera eats first”, Duo of Eggsdisplays a masterful use of colours from its ingredients: the golden yellow egg yolk and the tangy orange of the salmon roe combine with the cream-coloured egg shells to create an unforgettable dish.

Chef Tung has more than 20 years’ experience working in renowned establishmentsacross Hong Kong and Southeast Asia. Innately curious and inventive, he continues to seek out small and special ways of marrying high-quality ingredients with a sense of novelty, to give his dishes a discernible edge.In fact, another of his signature creations,Flying Dragon,won Silver in the Seafood category of the Best of the Best Culinary Awards in 2014.

Duo of Eggscan now be sampled at Café on the PARK for only HK$238(serves 4) during lunch and dinner periods, with 20% off until 31 December 2016. Two days’prior reservation is required.
