Pierside Bar & Restaurant at The Royal Pacific Hotel & Towers launches ‘Treasures of the Sea: Shellfish Specials’ dinner featuring ocean gems

(27 February 2019 – Hong Kong) This Spring, let Pierside Bar & Restaurant tickle your taste buds as you dive into an oceanic fiesta of assorted shellfish delicacies for the ‘Treasures of the Sea: Shellfish Specials’ dinner menu, available from 4 March 2019 every Monday to Thursday at HK$428 per person​.

Inspired by the beauty of the sea, the talented culinary team has meticulously curated this palate-pleasing dinner using only crustaceans. Embark on a voyage with the seafood trio ​featuring Japanese scallop tartare, fresh Thai shrimp bruschetta and crispy baby squid. Imported from Hokkaido, the scallop tartare pairs well with crisp, spicy Japanese pickled daikon. The fresh shrimp sitting on squid ink bruschetta, avocado salsa and the sweet and juicy caramelised Australian peach is simply a refreshing appetiser to enliven the evening.

The crustacean and tomato bisque​ with an Australian blue crab cake is served with tarragon enhancing the flavours of the lobster bisque. Boiled for 6 hours, the base of the shellfish stock is made of a medley of crustacean ingredients including lobster heads, blue mussels, shrimps, clams, onion together with assorted vegetables which makes it a perfect delicacy before the main course.

Sample main courses including the char-grilled shellfish platter​, half Boston lobster wellington​ or Pacific shellfish orzo with sea urchin​ to continue the journey. The tantalising char-grilled shellfish platter presents the unique freshness from the sea including fresh abalone (8 heads per catty) from South Africa marinated with Japanese sake, Australian tiger king prawn and Australian sea whelk grilled with 18 kinds of herbs. Half Boston lobster wellington stuffed with lobster, yellow and green zucchini and spinach with béchamel sauce is another dish to tempt your palate.  

Wrap the night with the photogenic ocean gems dessert featuring coconut panna cotta, butterfly pea flower lemon jelly with yoghurt ice cream and pistachio, served with dry ice.

In addition to the ‘Treasures of the Sea: Shellfish Specials’ dinner menu, Pierside Bar & Restaurant’s resident mixologist has hand-picked 10 incredible gins to concoct 100 refreshing gin-based cocktails for pairing.

Highlighted gins for selection are Monkey 47, Niemand Dry gin, Skin gin, Cubical by botanic, Hendrick’s​ and more. Pick your favourite gin, choose the ingredients and let our mixologist do the rest to please your taste buds. If you are not fond of gin-based cocktails, a glass of classic gin and tonic is always a good choice to start with. 7 kinds of specialty tonic water are available for your selection. All drinks start from HK$68 per glass.
