Gold Coast Starlight
A novel and delicious dim sum platter has struck gold for the YUE Chinese restaurant at the Hong Kong Gold Coast Hotel in the prestigious “2011 Best of the Best Culinary Awards – Dim Sum Category” organised by Hong Kong Tourism Board.
The winning entry, Gold Coast Starlight, named for its attractive appearance combining shrimp and taro dumplings with a baked pastry, won the Gold Award. YUE’s Chief Dim Sum Chef Tsui Chun-ming, who created the dish with Chef Ng Chan-u under the mentorship of Assistant Chinese Chef Wong Kam-ming, said that what made the dazzling platter special was its star quality.
“Shrimp dumpling was assigned by the competition organizer, and we selected two other creative ingredients – a deep-fried taro dumpling with seafood and a colour baked pastry with custard,” he explained.
“We added new elements to these classic dim sum recipes to create a ‘wow’ factor for patrons, and to make a platter that looks like three shining stars on the table.”
Chef Tsui also revealed that the secret to making first class dim sum was a combination of consummate culinary skills and attention to fine detail – along with a sense of innovation and adventure.
“To create a perfect shrimp dumpling, each dumpling must weigh between 5 and 7 mace, and the wrap should be chewy with no less than 18 folds on the surface,” he said.
“The add-on ingredient in the shrimp dumpling was bamboo shoot, while we mixed cheese and seafood in the filling of the classic deep-fried taro dumpling.
“Finally, the baked pastry with custard was an east-meets-west design using white chocolate to create a nest for the chicken-shape pastry.”
